Every city in the guide carries seven scores from 0 to 100: the density and quality of its fine dining, the energy of its scene, seafood, steak and grills, views and terraces, value for money and wine culture. The duel lays two cities over each other on a radar, counts the criteria each wins and names the biggest difference.
The scores are editorial judgements by the gourmaris team, based on the restaurants in the guide, price levels and the cities’ traditions. They are meant to start arguments, not end them.
