Mallorca’s beauty is that the great kitchens sit in extraordinary places: a 15th-century castle, a converted convent, a cliff above the Tramuntana coast at Béns d’Avall, a stone terrace with a paella and the sunset at Sa Foradada, a seaside fortress at Cap Rocat. Even a café, Ca’n Joan de s’Aigo, has served the same ensaimada since 1700.
The island eats seasonally: sobrassada and lamb in winter, red prawns from Sóller in spring, tomatoes and fish in summer, wine from Binissalem all year. Palma is a year-round dining city; the coast opens from Easter to October, and September is the perfect month.
