Ibiza has stopped being just a party. Martín Berasategui, Óscar Molina and Álvaro Sanz cook starred menus a few kilometres from the clubs, and the island’s beach restaurants are the most beautiful in Spain.
The clubs still open at midnight, but the reservations that matter now are for dinner. Etxeko at the Bless hotel carries Martín Berasategui’s name and standards, La Gaia at the Ibiza Gran Hotel fuses Japan and Peru with Ibicenco products, Unic at Migjorn and Es Tragón in Sant Antoni each hold a star, and Sublimotion sells the most expensive dinner in the world as a twelve-seat multisensory show.
The island’s true signature is the meal by the water: Es Torrent’s fish on a stony cove in Porroig, Amante on the cliff above Sol d’en Serra, Nobu in the Talamanca bay, El Chiringuito on the sands of Es Cavallet, Casa Maca on a farm above the town with vegetables from its own garden. Lunch runs until five and dinner starts at ten.
Ibiza is seasonal, from May to early October, and expensive in July and August. The reward is a sunset from a table, the sound of the sea and a scene that mixes Spanish families, DJs and yachts at the same counter.

- Beach restaurants take lunch bookings weeks ahead in July and August; May and September need a day.
- Es Torrent is reached by a dirt road; the reward is the fish of the day at the water’s edge.
