Thomas Keller’s Per Se on the fourth floor of the Time Warner Center serves his three-star tasting menu with Central Park through the windows: oysters and pearls, the salmon cornets, a butter-poached lobster and a dessert sequence that goes on for an hour. It is the most formal dining room in New York and one of the most beautiful.
