Organic, starred, at the water’s edge
Elsa at the Monte-Carlo Beach hotel is the first fully organic starred restaurant in Europe: Mediterranean fish from local boats, vegetables from Riviera farms, olive oil and lemons, cooked by Manon Fleury’s successors with a light, sunlit touch, on a terrace a few metres from the sea. Lunch here is the Riviera as it should be.
