The island’s first star
Álvaro Sanz earned Ibiza its first Michelin star at Es Tragón, a country house near Sant Antoni: a long, playful tasting menu of Ibicenco products and creative technique, a terrace under the trees and a rhythm that takes the whole evening. It is the most ambitious independent kitchen on the island.
