Martin Dalsass cooks a starred Mediterranean menu in Talvo, a 1658 Engadin house in Champfèr with painted ceilings and old wood: olive oil from his own trees, fish, pasta and vegetables with an Alpine lightness. Open in winter and summer, it is the Engadin’s most consistent fine dining and its most romantic room.
