Tohru Nakamura cooks in the Schreiberei, one of Munich’s oldest houses near the Marienplatz, on the first floor above a wine bar. His menu is Japanese-European, personal and deeply refined, with two stars and a reputation as the most exciting kitchen in the city. The old beams, the calm and the sake list make it unlike anywhere else in Bavaria.
