Nikkei Nine in the Fairmont Hotel Vier Jahreszeiten brought Japanese-Peruvian cooking to Hamburg in a dark, glamorous room: robata grill, sushi counter, ceviche and a cocktail bar that fills with the city’s best-dressed. The black cod, the wagyu and the tiraditos are the stars; the DJ on weekends is the reason the room stays loud until late.
